Bubbly Peach & Basil Cocktail

Happy almost Fourth of July! The summer always seems to sneak up on me. And I don’t even realize it’s summer until people start breaking out everything red-white-and blue, from clothing to desserts.

Desserts at Fourth of July shindigs are usually made up of anything with strawberries & blueberries.  Now don’t get me wrong, I LOVE me some strawberries. But I think we need to pay homage to another fruit that is just as emblematic of summer as our dear berries: Peaches.

But eating peaches can be quite…undignified.  Juicing ripe peaches and mixing the juice with alcohol will instantly elevate your peach consumption experience. Guaranteed.

WARNING/DISCLAIMER: This recipe is SUPER boozy.  And delicious.  So you won’t realize how boozy it is until you can’t feel your face.  DO NOT DRIVE A VEHICLE AFTER CONSUMING.  If you consume this tasty beverage and get behind the wheel of a car and cause an accident, I cannot be held responsible for the havoc you may wreak on yourself or the public.

In all seriousness, be careful this weekend, everyone.  Have a great time, enjoy this cocktail, and get yourself a designated driver or an uber.

Bubbly Peach & Basil Cocktail

Makes two cocktails

  • 6 oz. fresh pressed peach juice
  • 2 oz. simple syrup
  • 4 oz. white rum
  • 10 basil leaves, plus 2 small sprigs for garnish
  • Prosecco or other dry, bubbly white wine to fill glass*
  • Peach slices for garnish

Tear up the basil leaves and put them into a cocktail shaker.  Muddle them until the leaves look bruised.  Add in ice about halfway full.  Pour the peach juice, simple syrup, and rum into the shaker.  Cover and shake for a couple of minutes.  Strain & pour the mixture evenly between two, 10 ounce glasses (preferably chilled).  Fill to the top with Prosecco.  Garnish with basil leaves and a peach slice. Sit back and enjoy the summer!

* To make this drink less boozy, just use sparkling water instead of the Prosecco.  It’s still refreshing!
